So today is Saturday and I spent most of the day organizing, cleaning, cooking, making jewelry and watching movies. Great day. Here's what I made for dinner;
Mexican Casserole
1. Chop up half a red and green bell pepper and a quarter of an onion, saute in oil and garlic until tender.
2. Brown ground turkey until cooked thoroughly. Add taco seasoning and half a jar of salsa and simmer 20 minutes. Add sauteed peppers and onions, half can of chilli beans, half can of black beans and 3/4 can of yellow corn. Heat thoroughly. (The left over beans and corn can be put into the fridge and heated up later for a quick meal on the go, or grab a tortilla and you have instant lunch!)
3. Spray a casserole pan with non stick spray. Crush a layer of tortilla chips in the bottom of the pan.
4. Add the meat/bean mixture on top of the layer of chips.
5. Cover the mixture with a layer of sour cream
6. Sprinkle with diced tomato, chopped green onion, diced olives, and cheddar cheese.
7. Cover and cook for 30 minutes at 350 degrees
